From Ukraine: Borshch at The HOME Project

When I helped out in a group home for young Ukrainian children at The HOME Project, the cook often prepared borshch, a traditional soup that is familiar in many Ukrainian homes. Seeing this dish served reminded me how food can create comfort and a sense of normalcy, especially for children far from home.

Borshch is known for its deep color and hearty flavor, and it is often even better the next day.

Ingredients

  • Beets, peeled and grated

  • Potatoes, diced

  • Carrots, grated

  • Onion, chopped

  • Cabbage, shredded

  • Vegetable or chicken broth

  • Tomato paste

  • Garlic

  • Salt and pepper

  • Oil

Instructions

  1. Sauté onion, carrots, and garlic in oil until softened.

  2. Add grated beets and tomato paste, cooking for a few minutes.

  3. Pour in broth and add potatoes. Simmer until tender.

  4. Add cabbage and cook for another 10–15 minutes.

  5. Season with salt and pepper. Serve warm.

Borshch is often served with bread and, traditionally, a spoon of sour cream.
